Learning to make cheese at home is easy and fun! During this workshop we will explore the world of cheese, starting with a tasting of Quillisascut Farmstead Cheese and how they are crafted here on the farm.
- Overview of the step by step process that transforms milk to delicious curds.
- Rennet
- Cultures
- Instant coagulation (ricotta, mascarpone)
- Mozzarella
- Rapid coagulation (feta, blue)
- Long set (chevre)
Tuition $295 includes lodging, meals, and all course instruction. (transportation not included) The workshop begins at 1:00pm on June 14 and over 11:00 am June 15. (this workshop is immediately followed by the Hearth Bread and Wood-fired Oven (June 15-18) workshop,if you would like to sign up for the combined workshop $895.
