A 4-Day Italian Cooking Workshop at Quillisascut Farm

Join us this summer for a hands-on culinary retreat where Italy’s rich flavors meet the wild abundance of the Pacific Northwest. Nestled in the serene hills of Rice, Washington, Quillisascut Farm is your home for four days of connection, inspiration, and seriously delicious food.

Led by Paola Albanesi of Paola’s Italian Kitchen  this immersive workshop blends Italian culinary traditions with farm-to-table living. We’ll harvest, cook, and dine together in the rhythm of the land, learning from the animals, gardens, and each other.

What You’ll Experience

  • Fresh Cheese : Mozzarella, Stracciatella, Ricotta with milk from the farm’s goats
  • Sourdough Bread & Wood-Fired Pizza using heritage grains and local ingredients
  • Handmade Pasta + Seasonal Sauces from scratch with garden harvests
  • Gelato & Sorbetto using fruit from the orchard
  • Italian Preserves & Jams from seasonal bounty
  • Farm Foraging & Composting the Italian way
  • Cooking with Purpose: From antipasti to rotisserie chicken, we’ll create full meals inspired by Italian farmhouse kitchens

Each day is a mix of hands-on kitchen time, outdoor learning, communal meals, and unplugged rest. Expect a balance of structure and spontaneity, with space to connect, wander, and be nourished by the land.

Your Stay Lodging is included and accommodations range from the cozy clubhouse to a shepherd’s hut or a canvas glamping tent. All options are simple and comfortable. There are four shared bathrooms with hot showers. Want to sleep under the stars? Camping is also welcome.

All meals, snacks, and non-alcoholic drinks are included. Expect vibrant, rustic menus with ingredients straight from the farm—plus Italian touches that elevate every dish.

Good to Know

  • This workshop is designed for adults. Mature teens may be accepted with a parent or guardian—email us to check.
  • No previous cooking experience required, just a love of good food and an open spirit.
  • Group size is limited for a personal, immersive experience.
