Farm Culinary 101

The Sustainable Kitchen, professional development program for culinary students and food professionals

This workshop is an intensive immersion in farm to table ingredients. **If you are not a food service professional please see note below.

In the rolling hills above Lake Roosevelt near Colville, WA, Quillisascut Farm™ offers food professionals and culinary students a unique opportunity to experience the farm-to-table connection first hand.

During week-long programs, participants will observe goats being milked, make cheese, help care for farm animals, transplant vegetables, and harvest produce from the gardens. Students also visit neighboring organic farms and hear presentations about  market gardening. Lively group discussions about food systems, culture and globalization round out the experience.

Each day, students will work with a chef to prepare lunch and dinner using only ingredients from the garden and products from local farms. Dinner is a culmination of the day’s work–a time to feast on the bounty of the farm, reflect on the discussions of the day, and build community around the table.

2024 Flyer Culinary 101

Culinary Students and Food Service Professionals for those who work in the hospitality Industry or are enrolled in a higher education culinary, baking or pastry program. (Or for serious home cooks, this is an intensive training workshop in Farm to table cooking)

Tuition $1425 per person includes all course instruction, farm tours, materials, farm stay, and meals (does not include transportation)

**Notice that this is two part application if you are requesting a financial assistance.

Home cooks are not eligible for financial assistance

What to bring with you to the farm In addition to this list this year we are asking participants to bring their own sleeping bag and pillow and if you have a tent bring it along.
